| RECIPE FOR MADRAS CHICKEN CURRY |

Ingredients:
Chicken: 2 lb
White flour
Onion: 1
Garlic: 5 cloves
Curry paste: 3 tb
Salt: To taste
Chilly powder: 1/2 tb
Yogurt: 1/2 cup
Tomatoes (large): 2
For the Madras curry paste:
Coriander: 1/2 cup
Cumin: 1/4 cup
Black pepper: 1 ts
Turmeric: 1 ts
Dry mustard: 1 ts
Chilly powder: 1/2 tb
Cayenne: 1 ts
Garlic: 2 ts
Ginger: 2 ts
Oil: 1/2 cup
Cider vinegar
Salt: To taste
The Steps:
Pre - Preparation :
1) Cut up the chicken and chop the onion and tomatoes.
2) Mince the garlic.
3) To make curry paste:Grind the coriander and cumin.
4) Crush the garlic and mince the ginger.
5) Mix dry spices in a bowl.
6) Add garlic, ginger and enough vinegar to make a smooth puree.
7) Heat oil in saucepan until hot and add spice mixture.
8) Reduce heat stirring constantly until oil starts to separate from
the spices.
9) Allow to cool and remove excess oil.
10) Place in glass jar and store refrigerated.
Preparation :
1) Dust chicken pieces with flour.
2) Heat oil in large saute pan until very hot.
3) Cook chicken until browned. Remove chicken.
4) Saute onion and garlic until tender.
5) Add curry paste, salt, chilly powder.
6) Stir in yogurt and tomatoes.
7) Add chicken back in and coat well with sauce.
8) Reduce heat to simmer, cover and cook 30-40 mins.
